Oriental Cole Slaw
What a refreshing change from lettuce based salads. This cabbage based Oriental
salad is very tasty and crisp. Try it. You won't be disappointed!
Ingredients
Salad:
- 1 medium head of green cabbage, washed and chopped
- 10 green onions, washed and sliced
- 8 tablespoons toasted sesame seeds 1
- 8 tablespoons slivered almonds 1
- 3 packages of ramen noodles, crushed
Dressing:
- 3/4 cup rice wine vinegar
- 1-1/2 cups vegetable oil
- 1/2 cup sugar
- 2 teaspoons salt
- 1 teaspoon pepper
Steps
- In small bowl, add rice wine vinegar and sugar. Stir until sugar is dissolved
- Add remaining dressing ingredients and stir until mixed well
- Toss salad ingredients in a very large, non-reactive serving bowl
- Add dressing. Mix well to coat salad with dressing
- Cover and refrigerate overnight
- Uncover, stir and serve

1 To toast the sesame seeds
and slivered almonds, in separate batches, spread evenly in jelly roll pan, lined with
parchment paper and bake at 325 F until
browned. Stir occasionally while toasting to ensure even toasting. be very
careful when toasting as there is a fine line between toasting and burning.
