Spicy Beef Dish
This spicy beef dish is "Atkins friendly" and easy to
make. I tried to duplicate a spicy dish I like at a nearby Mexican
restaurant.
Ingredients
- 3 pounds beef stew meat - cut into bite size pieces (about 1/2")
- 1 large green bell pepper - cut into bite size pieces (about 1/2")
- 3 tablespoons Atkins

Bake Mix 1
- 3 teaspoons Olde
Westport© Gold
Coast Garlic Shake spice mix 2
- 1 gallon size Ziploc© bag or brown paper lunch sack
- 4 tablespoons olive oil
- 1 large red bell pepper - cut into bite size pieces (about 1/2")
- 1 medium yellow onion - cut into bite size pieces (about 1/2")
- 8.1 ounces La
Preferida© brand Salsa
Chipotle hot salsa 3
- 1/2 cup water (about a salsa bottle full)
Steps
- With meat and vegetables cleaned, trimmed and cut into bite size pieces,
heat half of the olive oil in large Dutch oven pan (I use a cast iron pan
for this) on medium-high heat
- While oil is heating, combine half of bake mix and garlic spice mix in bag
- Add half of meat to bag. Close bag, trapping air inside and gently
shake until meat is thoroughly coated
- Add coated meat to pan with oil and spread meat evenly on bottom of pan
- While first batch of meat is cooking, add the rest of cut-up meat and bake
mix/garlic spice mix to bag and shake to coat as before. Leave meat in bag
and set aside
- Stir meat in pan and continue to cook until meat is browned on all sides
(about 8 to 10 minutes). When done, remove from pan and set aside
- Add remaining 2 tablespoons of olive oil to pan, heat for 1 minute, then
add remaining coated meat and cook until meat is browned on all sides
- Add 1st batch of meat to pan, add vegetables, add salsa and salsa bottle
of water (about 8 ounces)
- Stir mixture well, bring to boil, then reduce heat until mixture reaches a
heavy simmer to gentle boil
- Cover and cook for 90 to 120 minutes, stirring every 15 minutes until meat
is very tender
- Serve in bowls with sour cream garnish (if desired) and a salad

Variations
Depending on your taste and what your diet allows, you may wish
