Sicilian Meat Roll
I have to admit that I have not made this recipe myself yet
but I thoroughly enjoyed it at a dinner party recently. So much so that I
am putting it on my web. Take a chance, you'll love it!
Ingredients
- 1-1/2 pounds ground beef (very lean)
- 1/2 cup tomato juice
- 2 eggs, beaten
- 1/2 cup soft bread crumbs
- 1-1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon oregano
- 2 cloves garlic, minced
- 8 slices cooked ham
- 8 slices mozzarella cheese
Steps
- Mix all ingredients together except ham and cheese
- On a 16" long piece of waxed paper, pat mixture out to a 10" by
16" rectangle
- Arrange the ham and cheese on the flat mixture, then roll it all up like a
jelly roll, using the waxed paper to help roll it
- Seal the seam and ends well
- Place in greased baking dish and bake at 350 degrees for about 1 hour
Serves 6 to 8
