Southern Comfort Cake

 

Ingredients

Cake:

Yellow Cake Mix (not Pudding in the Mix style)
Small package of Instant Vanilla Pudding mix
4 Eggs
1/2 cup Vegetable Oil
1-1/2 ounces Southern Comfort Whiskey
1 cup Milk
1 cup chopped Pecans or Pecan chips

Glaze:

1/4 cup Southern Comfort Whiskey
1 stick Salted Butter
3/4 cup Sugar
1/4 cup Water

Steps

  1. Preheat oven to 325 degrees F;
  2. Spray *bundt pan with cooking spray;
  3. Coat pan with flour;
  4. In large mixing bowl, add all 7 Cake ingredients and mix by hand until well blended;
  5. Pour batter into floured pan and bake in center of oven for 50 to 60 minutes. Cake is done when lightly browned on top and toothpick inserted in center of cake comes out clean;
  6. While cake is baking, in a small sauce pan, add all 4 glaze ingredients and cook to boiling.  Reduce heat and simmer for about 10 minutes and remove from heat;
  7. When cake is about done, using a spoon, remove and discard the white top layer that has formed on the cooling pan of glaze;
  8. When cake is done, leaving it in the pan, evenly pour about 1/2 of the glaze onto the cake;
  9. Allow cake to cool in pan for about 30 minutes;
  10. Set a large inverted plate on top of cake and flip both upside down, together, very carefully, to remove cake from pan to plate;
  11. Pour remaining glaze over cake.

*Mini Loaves Variation:
I've used 6" x 3-1/2" mini foil loaf pans with great success.  They make great gift loaves. Divide the batter evenly between 5 floured mini foil loaf pans (about half filled) and bake for about 35 to 40 minutes.  When cakes are starting to brown and are springy to the touch in the center, they're done.  Cool them in the pan for at least 15 minutes, then carefully pop each out of the pan and cool for at least 15 minutes on a rack.  Once cool, I slice them into 4 generous slices and return the reassembled cakes to their pans.  You may even want to wash and dry the pans before returning the sliced cakes to them.   Spoon 3 to 4 tablespoons of glaze over each cake, cover with foil and give them to some deserving friends!
