Mexican Quiche
This egg/cheese dish is Atkins Friendly and very easy to
make.
Ingredients
- 6 eggs
- 16 ounces shredded cheddar cheese
- 8.1 ounces "green" salsa (see Tips below)
Steps
- Preheat oven to 350 degrees F
- In a 9" x 13" baking dish or round quiche dish, add all 6
eggs
- Using fork or whisk, mix/whip eggs well
- Add 1/2 of the cheese, stir
- Add the salsa, stir and spread mixture evenly over bottom of dish
- Sprinkle remaining cheese over mixture
- Bake uncovered until set (about 20-30 minutes)
- Remove from oven and allow to stand 5 to 10 minutes, cut and serve
