MAKES 1 LOAF + 4 - 6 MUFFINS
PRE-HEAT OVEN TO 350 DEGREES F
TRIM BOTH ENDS FROM ALL BANANAS AND PEEL, add bananas to a large plate and mash them with a fork
IN THE BOWL FOR YOUR STAND MIXER, add butter, sugar and eggs and beat until creamed.
IN A GLASS OR SMALL BOWL, combine milk, soda and drop of vinegar and stir
TO CREAMED MIXTURE IN MIXER BOWL, add milk mixture, vanilla extract, mashed bananas and flour and mix until well incorporated. Do not over-mix the batter. If desired, add in nuts or chocolate morsels and hand mix until add-ins are well mixed into batter.
POUR BATTER into greased and floured loaf pan. Fill just over half-way. Pour any remaining batter into greased and floured muffin tin, filling just over half-way.
VARIATION: Add 1/2 cup either chopped walnuts or semi-sweet chocolate morsels
